Milk availability is the controlling factor in keeping up with demand. German milk production week after week is still declining. Cheese contract discussions for the first quarter are moving slowly because both buyers and sellers are uncertain about milk supplies and thus, cheese production potential. In the U.S., wholesale blue, gorgonzola, parmesan and Romano prices increased $.0025, while all other varieties are unchanged. NASS Cold Storage reports that October 31, 2016 stocks of Swiss, 24.15 million pounds, are down 7% from September but up 13% from one year earlier.
