December 30, 2015 (Report 52) NORTHEAST BUTTER: There is a maxim heard from people who manufacture butter and handle cream, "December feeds demand for fat but in January people want healthy". What that means is that cream in demand for butter in December transitions more toward use for yogurt manufacturing in January. This week there has been a movement of available cream being sold, rather than churned. There are expectations of more cream being available in January, as bottling increases and standardization of milk yields cream. This week, bulk butter prices for domestic sales are flat market to 5 over the market of the CME Group, with various time frames and averages used. According to the DMN National Retail Report-Dairy, during the week of December 25-31, 2015, the U.S. weighted average advertised price for 1 pound butter was $3.03, down 3 cents from a year ago, and down 7 cents from the previous week. The weighted average butter price in the Northeast was $3.24.
