January 21, 2015 (REPORT 3) NORTHEAST WHOLESALE CHEESE: Sufficient milk intakes are furthering seasonally active wholesale cheese production rates. Plants are operating near capacity in some instances. Orders for mozzarella are active, prompted by food service and retail demand as schools reopen and the Super Bowl looms. Current Swiss transactions exemplify an inelastic tone as buyers are willing to pay the higher prices associated with the aging cost of production. Inventories are mixed but growing marginally. The market is unsettled. Last week, the weekly average cheese prices on the CME Group declined for both blocks and barrels. This week, the Northeast wholesale price for 40# block and muenster retreated $0.0575, as process 5# sliced declined $0.0350. Grade A Swiss price is steady. Tuesday's CME Group daily cash prices saw barrels close at $1.4450, down $0.1500 from a week ago, while blocks closed at $1.4750, down $0.1150 from a week ago.
