Supplies are tightening for some manufacturers. The tighter cheddar supplies are related to higher prices and returns currently available for Mozzarella manufactured in Oceania, with some sales near $4,000 per metric ton. This has led to a shift in manufacturing preference toward Mozzarella from cheddar. New Zealand cheese exports January-July 2016 increased 10.7% from the same period of 2015 according to Eucolait.
