CHEDDAR CHEESE: Quiet and steady conditions kept the cheddar market 
unchanged.  Sales are moving slowly, primarily to existing customers.  
Some manufacturers are quietly offering selective discounts to achieve 
sales targets, although reports indicate that there are not huge amounts 
of cheddar remaining to sell.  As the end of the milk production season 
nears and milk production seasonally declines, many processors believe 
there are better options for using milk than making cheese.
