May 04, 2017 (REPORT 18) DRY BUTTERMILK - CENTRAL AND EAST CENTRAL: This week, dry buttermilk prices in the Central region remained steady. Dry buttermilk spot market reports were infrequent, while many buttermilk sales are reportedly through contractual agreements. Demand for dry buttermilk ranged from slow to steady. Industrial bakery orders have been expectedly light in recent weeks. Buttermilk drying is reportedly light, but production varies by plant. Dry buttermilk inventories remain adequate. The dry buttermilk market tone is unsteady. The DMN monthly average of the range price series for Central and East dry buttermilk during April was $0.8713, compared to $0.7594 a year ago. EAST: The Eastern dry buttermilk price is unchanged this week. With heavy cream volumes clearing into churns, dry buttermilk production is steady to increasing.
