With less milk/cream availability and strong demand for fat, some industry participants feel the dry buttermilk market is likely to continue firming. Demand from ice cream makers is seasonally robust. Dry buttermilk production is irregular as most plant managers are focusing on converting skim milk volumes into NDM/SMP.
